Laura and David Shea opened the intimate and cozy applewood in 2004 and have developed a steady neighborhood following both for their exceptional cuisine and their devotion to local farmers. The seasonality of their menus expresses itself in every course, from cocktails to dessert, and is especially celebrated in their Meet-the-Farmer dinner series, which has featured Ian Marvy of Added Value Farm in Red Hook and Ridge Shinn of the Hardwick Beef Cooperative. David butchers locally-raised hormone- and antibiotic-free animals on-site, serves only wild fish, features a wonderful selection of American farmstead cheeses and tops it all off with a wine list based almost exclusively on sustainably, organically and/or biodynamically raised grapes.
